
Crémant de Bourgogne Rosé Non-Vintage
Since its founding in 1840, Simonnet-Febvre has specialized in sparkling wines from Chablis, known today as Crémant de Bourgogne. This 100 percent Pinot Noir Rosé Crémant is made in the tradtional method used to make sparkling wine in Champagne, or the Méthode Champagnoise. The Pinot Noir fruit is hand harvested from vines averaging 20 years in age. The grapes are whole cluster pressed, and fermented in stainless steel tanks. The juice remains on the skins for 10 hours to extract color and tannins. Select wines from several vintages are then blended and bottled with the liqueur de tirage, which allows the secondary fermentation to take place in the bottle, giving the wine its magnificent mousse and sparkle. After 9 months of aging and fermenting, the bottles undergo remouage and disgorging, and a dosage is added to the finished cremant, leaving 10g/L of residual sugar in the wine, creating the Brut style. As this sparkling Rosé looks and tastes just like quality non-vintage Champagne from the best producers, it represents substantial value in the bubbly market.
