About This Product

This superb offering from owner Jonathan Maltus of Château Teyssier is a blend of 38% Sauvignon Blanc, 38% Sémillon and 24% Muscadelle from a tiny property comprising only 2 acres in and around Saint Aubin de Branne in the Saint Emilion. In terms of the viticulture, the vines are pruned with the double guyot system. The secondary shoots are removed and two runs of green harvesting are completed in order to achieve no more than three bunches of grapes per vine. The grapes are handpicked into small trays before transfer to the winery. On arrival at the winery, the trays are emptied onto the vibrating sorting table where grapes that have not attained optimum maturity are automatically removed through slots and six sorters remove any bunches that do not conform to an acceptable standard. The grapes are then transported by conveyor belt directly to the press where they are lightly whole-bunch pressed in a gas filled pneumatic press. The juice is chilled for a long period of time at five degrees to enhance the aromatics. Once blending is complete, the juice is poured into new French oak barrels that have been given a high level of toasting. Malolactic fermentation then ageing in original barrels with bâtonnage 6-8 months.
